I use the same recipe I would use if I was making meat chili, only I put in beans, mushrooms (button and portabello), peppers (red, green, yellow, orange) and tomatoes.  Sometimes I put in tofu cubes, since it acts like a sponge and ends up tasting like the spices and whatnot I put in the pot.  It helps add texture to the chili since there's no meat.  You don't taste any tofu-ness, so not to worry. 

I don't think I've ever had white chili.  I've had chili with white beans instead of kidney beans, but I doubt that's the same thing you're talking about.  It sounds good none the less.  :)

We do that sometimes too.....usually on the weekdays when my mom or someone else in the house doesn't feel like making it.  Publix has a great lemon-pepper roasted chicken.  You can really taste the lemon in it!
