My voice sounds different on a tape/video recording than how it sounds when I talk to someone in public

That is quite normal.  And it is a combination of several things.

My normal talking is rather distinct rhythem, because of many years of speech therapy.  I have always had a bad stutter, and when I get excited or agrivated, it comes back in spades.  Even my normal talking, I would stutter however.

When I went through therapy in the early 1970's, I had a coach that had a unique way of fixing stutters.  He had us slow down our talking, and if we sensed we were about to stutter, to stop and pause.  My speaking sounds rather slow most times, because of the frequent pauses.  But it is such a part of how I talk, that people hardly ever notice it, or even realise that I stutter.  Most of the time it is because my mind is moving faster then my mouth can.  Then I come to a word that I simply can't get out.  Pausing normally lets me catch up with myself, and get the word out.

Other times, I get stuck on a word.  By pausing, it lets me come up with a new word, and continue the conversation (for example, I may not be able to come up with "trapped", so after the pause I replace it with "stuck").

And when I speak in public, it is something very different.  When I set myself into "spiel mode", I can actually talk quite quickly and at length.  But this is basically a series of pre-prepared scripts that I run in my head, and require no thought at all.

If anybody wants to hear my voice, here is a link to 2 of the movies I made.  I did the narration on both of them.

No, I was using my false vocal cords. They are the vocal folds that protect the fairly delicate true vocal cords. If you scream or growl these are what you use, I believe if you sing Falsetto like Rob Halford or some such individual you use them as well.
If my science is right they are more developed on men in general, this is why men can sing at a normal range but also go much higher and much lower whereas women are generally (some exceptions i.e Angela Goscow) limited to the range their true vocal cords can supply.

I used Babelfish so I hope this works.

I hope I was helpful or it made any sense at all! 8)
