My favourite is Walter Hill, for his direction of the extremely awesome 'Streets of Fire' and other greats like '48 Hrs', 'Another 48 Hrs', 'The Warriors', 'Red Heat', 'Supernova' and the first 'Undisputed'
Also like Jonathan Demme, as he made two of my favourite comedies ever: 'Something Wild' and 'Married to the Mob'

Why do you like these directors, in particular? And do you like all the films they've directed, or just certain ones..?

Every country where great films are created have some of my favorite directors.
For the US, it's got to be Orson Welles with films like, Citizen Kane, The Magnificent Ambersons, The Lady from Shanghai, The Tragedy of Othello: The Moor of Venice, Mr. Arkadin, The Trial (Le Procès), & Chimes at Midnight.
And it's films like Chimes at Midnight and its imaginative Battle of Shrewsbury scenes that show what a great director (and editor) he was even later in his career.

David Croenberg, I like as a director, because he's not afraid to do odd films, and not play it safe.
Favorite films:
Scanners, The Fly, A History of Violence, and to an certain extent Existence.
Joel and Ethan Cohen
I like how some of their films, are odd and quirky, and over all strange, plus in a few of their films, they have Bruce Campbell doing a cameo.
Favorite films:
Blood Simple, Fargo, Hudsucker Proxy, O, Brother, Where Are Thou, and Raising Arizona.
Steven Spielberg
No particular reason, he does however have John Williams, one of my favorite composer's doing the film score, for a lot of his films.

Jurassic Park, E.T., Close Encounters of The Third Kind, and Jaws

David Fincher
Out side of The Game, which was an ok film, he hasn't made a film that I didn't like, plus I like overall bleak and unapologetically dark, the film Seven was.

Fight Club, Seven, The Curious Case of Benjamin Button, and Panic Room
Quentin Tarantino
I pretty much like his films, ever since he did Reservoir Dogs, plus his films have really great soundtracks.
Favorite films:
Reservoir Dogs, Kill Bill, Vol. 1 and 2, Pulp Fiction and Inglorious Basterds
Peter Jackson
Off hand, I couldn't imagine anyone else directing The Lord of The Rings films.
Favorite films:
King Kong, The Lord of The Rings trilogy, Braindead and The Frighteners
James Cameron
Very few of his films are dull and boring, all though, I could care less for the movie, Titanic.
Favorite films:
Aliens, Avatar, The Terminator and Terminator 2
Michael Mann
He's really great at making crime movies, such as Heat, Thief, and Manhunter, all though Miami Vice was an ok film, plus the camera work in his films are great.

Heat, Manhunter, Thief, Collateral, and Ray
Ridley Scott
I pretty much enjoyed his films, ever since he made Alien, it's one of my favorite films, of all time.

Christopher Nolan
He helped make Batman, edgy and entertaining again, plus I like the film, Memento
Favorite films:
Batman Begins, Dark Knight, The Prestige, and Memento
Zach Snyder
So far, I am probably one of the film people, who like Watchmen, a lot.

Dawn of The Dead remake and Watchmen

I also like Edgar Wright, a lot too.
As for Sam Raimi,
I love the camera work and the over the topness of some his films:
