I used to ADORE pancakes on Shrove Tuesday ! For some reason, I thought it was closer to Valentine's (Feb 14).
Anyhow, my nan made some excellent pancakes ..... plenty of caster sugar, and lemon. Those were the days ! :\'(

The batter is made and is resting in the fridge.

The batter is made and is resting in the fridge.
On the radio it said that resting the batter in the fridge gives the batter more air and that usage is for Yorkshire Pudding, and the batter as soon as it is mixed is cooked into the pancakes.

I've done it both ways and not really noticed much difference to be honest.

A traditional pancake race has fallen flat after it was cancelled due to health and safety regulations.

Apart from what I regard as 'traditional' pancakes .... well, at least in the UK ...i.e. the thin ones, with castor sugar and lemon on them .....
I of course, LOVE crepe suzettes .... flamed with plenty of alcohol (dont' burn it ALL off ) :\'(
Also, the American thicker ones are ok ... but I particularly like them with blueberries on top ! 8)
