Doesn't everyone like to eat tree rats?

I know I've got plenty of them in my woods, I could keep a family of four well fed for a month on just squirrel meat.

I have tried Tennessee Squirrel Stew once. Not bad, but not enough to make more than a mouthful.

The skinning method may be brutal, but the same could be said of any method for killing an animal for food preparation.
Veal is a particularly good example of this.

As you know, I am a hunter. I use my tree rats for "Squirrel Caccitorre". In sauce, with onions, peppers, mushrooms, crushed garlic, fresh basil, and fresh oregano. Topped with grated Romano and Parmessian cheeses.

But more importantly, they are a very healthy meat and protien source:

I've had squirrel a few years ago, It looked just like the skinned squirrel in the video.
It was a little on the greasy side but other than that it was really tasty

She didn't want it skinned or dressed out.  A couple days later, she brought in this huge tupperware container full of meat chunks, all cooked, no salt, pepper or anything like that required.  It was some of the sweetest cooked meat I'd ever eaten.  I asked her for the method she used to prepare it and she would not tell me, and I can truly say I've never been able to duplicate her tact in making this.  I've even gone as far as to try my clay pot method and cannot match her results.

I think a lot of it is based on their diet, and the body of water they are taken from.  I've had both young ones and older, and both give good results under the proper circumstances.

I'm not sure what the actual name for the disease is, but the locals up here call it "beaver fever", and it's primarily a problem when they come from certain bodies of water that carry the bacteria that cause this.

Never tried it for breakfast, although if  finely chopped and then mixed with some onions and diced potatoes it could be worth giving it a shot.

I have a North American Hunting Club cookbook someplace in the library, it details recipes for almost every kind of animal......don't know about opossum though....I'd have to be at the point of starvation before I'd eat one of them....seriously.....although I'm sure it probably is good if prepared correctly....

The recipe to which I refer can be found in "The Nero Wolfe Cookbook".
It is quite good, believe me.
It may sound repulsive, but so does any animal, if you're not used to eating it.
Example: People in Louisiana have been known to cook & eat alligator, or crocodile.
Anyone not from Louisiana may find the thought disgusting.
