Subject: In Praise of...

In praise of bread.  Specifically, home made bread.

The only drawback to home made bread, if you don't use a machine, is the time it takes.  

Its benefits.  It makes the house smell good.  You get to play with yeast.  You can make it any way you want to.  Even if you've never made it, within a month you'll be creating something you're proud of.  It's cheaper than the stuff you buy in the store.  You don't have to bake the whole recipe... fried bread with maple syrup is a breakfast for royalty.  When it starts to go stale, you can make it into croutons, or use it in meatloaf, or use it to thicken soups and stews.  When baking bread, you are engaging in an ancient and honorable art.

Let's not forget that kneading it lowers stress levels.

Yummers, I love a good, yeasty, homemade bread. I've never been able to make it to my satisfaction at home, but my sister and Mother bake bread all the time! :)

Mmm. Good idea Steve. Especially with cold weather coming on. Fresh bread, some homemade soup-Ahhh, what more could you ask for. I think I'll drag out the bread maker right now. I can bake bread from scratch and it is more fun kneading the dough, but the machine is so much easier.
Thanks for the idea Steve. Can't wait to fill the house with the smell of bread baking. ;D

...MMMMM... Steve what a delicious idea.:-* :-* My mom just gave me her old home-ec textbook (published in 1899) with all kinds of bread recipes to try. (I can make most of the cookies in it blindfolded by now.  ;))

I used to work at an all-night supermarket, and one of the  bakers sold some of his own home-made bread on commission.  I had to remember to ask him to save me a loaf because his stuff always sold out within an hour of him putting it out, still warm.

Yeast is the coolest stuff, Race.  I can't explain it.  It sits in a dark jar for a year... get a little warm water and a pinch of sugar and all of a sudden it's foaming.  Or, as Colin Clive put it so well, "It's alive!"

And it is.  The bubbles in champagne and the holes in bread are yeast farts.  Okay, there's a little more science behind it, but in 15 words or less that's what they are.

Thanks for reminding me that I need to bring out my bread machine again, Steve! ;)

Bread is a food that I have always been very picky about.  If I eat bread it has to be very fresh.  Stale bread that's more than 2 days old just doesn't cut it for me!  Don't ask me why! ::)

That's the beauty of it, CF.  Even if you don't go the bread pudding/crouton route, at least you can spend a peaceful half hour at the park, feeding the pigeons and thinking nice thoughts.

Personally, I'd never have a bread machine.  I like playing with the food too much.  But, you machine users know about "vital wheat gluten", don't you?  I just added a tablespoon full to some white milk bread.  You can find it in the baking section at most grocery stores.  It's basically wheat protein... it boosts the yeast action.

Then again....

Some people are alergic to yeast as well.

Not me! Fresh Bread in any way, shape or form is awesome!!!

I've used vital wheat gluten in pumpernickel recipes, but it hasn't helped.  I stick to the recipe religiously the first time around, but I've never been able to make a decent loaf of pumpernickel.  Rye flour is very heavy.

I must be the only person to like rye bread (without the carraway seeds, of course). Raisin bread is popular where we work, but I wouldn't make a meat sandwich with it.
