I always loved when George was going on and on about wanteing to be Pittied... He said something like:
I like Pity.. pity is good
George was a riot....
and I also like Franks mantra of "Serenity NOW ... which then became "Hoochie MAMA!"

Here's kind of a long one but I love it!
(George is telling Jerry that he wants to name his future baby "Seven")--
JERRY: Seven? Yeah, I guess I could see it. Seven. Seven periods of school, seven beatings a day. Roughly seven stitches a beating, and eventually seven years to life. Yeah, you're doing that child quite a service.
GEORGE: (adamant) Yes I am. I defy you to come up with a better name than Seven.
(Jerry walks toward the kitchen. He sees an item on the counter.)
JERRY: Awright, let's see. How about Mug? (picks up the mug) Mug Costanza, that's original. (he turns and sees another item) Or uh, Ketchup? Pretty name for a girl.
GEORGE: Alright, you having a good time there?
(Jerry is in the kitchen, and opens a cupboard. His eyes run over the array of good within.)
JERRY: I got fifty right here in the cupboard. How about Bisquik? Pimento. Gherkin. Sauce..... Maxwell House.
GEORGE: (shouts) Awright already!!

The main reason you watch a TV show is because it ends. If I want a long, endless story with no point to it, I've got my life.
A comedian can't do that. I can't go, "A man walks into a bar with a pig under his arm. Can you come back next week?" :D

I forget the episode title, but it's where George takes an IQ test which his then-girlfriend asked him to. But he has Elaine take it while he kills time at her house, "pretending" to be working on it. After she gets some food spilt onto it, she sneaks it back to him:
Monica: What happened to the test?
George: I spilled some food on it.
Monica: Food? Where did you get food?
George: From my pocket.
Monica: What?
George: Oh yeah, I had a sandwich in my pocket.
Monica: And coffee?
George: Yeah, had some coffee too.
Monica: Where did you get the coffee?
George: Where did I get the coffee? From the grocery store.
Monica: How did you get there?
George: I walked.
Monica: How did you get out of the apartment? I didn't see you leave.
George: I climbed out the window.
Monica: You climbed out the window? Why didn't you go out the door?
George: The door? Why would I go out the door? The window's right here!
Stuff like this shows how much of a liar he is, which makes it funny. ;D
