One show that readily comes to mind for me is "That's Life", a CBS drama show about a young woman who breaks off her engagement so she can go back to school and earn a college degree. I didn't get to see it every week, but I do remember some of the storylines... and the show itself lasted only two seasons.

There was also the GSN game shows "Friend Or Foe", "Russian Roulette", "Whammy! (The All New Press Your Luck)" and "Wintuition", which ran during 2002-2003. I liked Wintuition the best.

Titus :D I thought Stacy Keach was brilliant as Chris Titus's father on that show. He made me laugh so hard! There are some episodes of it on Youtube. Another show on Fox at that time that I tried to catch whenever I could was called Boston Public. This was a show about a public high school in the heart of Boston. There was also a show called Providence which was about a woman and her dysfunctional family it was a sappy drama but well acted none the less.
