I like the version of 'First cut is the deepest' by Sheryl Crow. Very good - like the P.P Arnold version too.

Don't forget OMD's version of VU's "Waiting for My Man."  It's on the B-Sides CD.  They changed the title to "Waiting for The Man."  The band considered their version a failure, but I think it's quite catchy.

I voted for Destiny's Child's cover of Samantha Sang's 'Emotion". They did a good job, actually. My second vote would go to Sheryl Crow's version of Cat Stevens's/Yusuf Islam's "The First Cut is the Deepest".

Of those listed, I'll go with "Drift Away." BTW, Uncle Kracker does not sing the cover version by himself. You can actually hear Dobie in parts of the song.

I'd say my favorite recent cover was "Hurt" by the dearly departed Johnny Cash.  Trent Reznor wrote a great song there, but I just don't like NIN.  Cash's version nearly brings me to tears!
