Lately I've been really into artists like Ben Folds, Fiona Apple, Tori Amos, and even some Bjork. Anyone have any favorite songs by these artists?

Ben Folds "Army" and "Song For The Dumped", Bjork "Human Behaviour", Fiona Apple "Fast As You Can" and "Limp", and Tori Amos "A Sorta Fairytale", are all great songs IMO.

I like the song "Battle of Who Could Care Less" by Ben Folds Five... I really don't care for Tori Amos or Fiona Apple.  The kind of piano rock I am into would be stuff like Elton John and Billy Joel. :)

If you're looking for "Jazz Rock," I suggest Steely Dan.  Everyone loves Steely Dan.  Maybe some Blood Sweat and Tears, or some early, pre-suck Chicago.

The piano rock artists you mentioned are, of course, all fantastic (especially Ben Folds, who I idolize).  Other places to start with piano rock:
Steely Dan - Barrytown
Joe Jackson - Is She Really Going Out with Him, Steppin' Out, pretty much his entire catalog
Squeeze - Tempted, Black Coffee in Bed, others
Fleetwood Mac - Hold Me
Bruce Springsteen - A lot of his early stuff with the E Street band is piano heavy
Jerry Lee M-F'n Lewis
Coldplay - Trouble
A good deal of Paul McCartney songs

My sister made these mix CDs with lots of piano in them.  You might be interested in some of the songs on them because they are mostly good piano rock.  Here are the songs on the CDs so you can check them out if you wish:

CD 1

1.  Where You Lead--Carole King
2.  Tiny Dancer--Elton John
3.  Ticket To Ride--Carpenters
4.  Let It Be--The Beatles
5.  Every Grain of Sand--Bob Dylan
6.  Scenes From an Italian Restaurant--Billy Joel
7.  Morning Has Broken--Cat Stevens
8.  I Feel The Earth Move--Carole King
9.  Thunder Road--Bruce Springsteen
10.  A Thousand Miles--Vanessa Carlton
11.  Fallin'--Alicia Keys
12.  Bridge Over Troubled Water--Simon and Garfunkel
13.  Bohemian Rhapsody--Queen
14.  Home Again--Carole King
15.  Lullaby (Goodnight, My Angel)--Billy Joel
16.  Songbird--Fleetwood Mac
17.  Sara--Bob Dylan
18.  Like a Rolling Stone--Bob Dylan

CD 2

1.  Tangled Up In Blue--Bob Dylan
2.  The Way It Is--Bruce Hornsby and the Range
3.  A Long December--Counting Crows
4.  Ordinary Day (live)--Vanessa Carlton
5.  Hold Me--Fleetwood Mac
6.  Cherry, Cherry--Neil Diamond
7.  Let The River Run--Carly Simon
8.  Mr. Blue Sky--ELO
9.  Thank You--Dido
10.  Hanginaround--Counting Crows
11.  Someone Saved My Life Tonight--Elton John
12.  Lay Down (Candles in the Rain)--Melanie
13.  Maybe I'm Amazed--Paul McCartney
14.  Old Man and Me--Hootie and the Blowfish
15.  Sweet Baby James--James Taylor
16.  Like a Rolling Stone--Bob Dylan (she must like this song)
17.  I Guess That's Why They Call it the Blues--Elton John

I haven't really paid close attention to some of these songs, but I'm pretty sure they all contain SOME piano in them.  I recommend the Elton John songs especially, although they are slower, I don't know if you like a lot of slower music.  The song by Bruce Hornsby is really great too, I would definitely check that out!  Hope that helped.

I also can't recommend enough Todd Rundgren.
