Hard to choose. My favorite is actually Monterey Jack.

Same here, plus Swiss and Monterey Jack...For a good toasted cheese sandwich I like Velveeta the best.

Well Velveeta isn't really considered cheese per se, it is a "pasteurized processed cheese product" and just a bit too scary for me.

I picked hard to choose. I love Cabot cheddar and the sharper the better. There is also a local cheese maker that makes incredible mozzarella. I usually get it smoked. (LOVE smoked cheese.) They also make a good feta which I like to. I also like Swiss-especially on sandwiches.
I do not like processed cheese. 8-P The funny thing is, I used to eat it all the time and now I can't tolerate it.

I will occasionally eat mozzarella NOT on pizza (for example, if it's melted atop pasta), but generally it's hard to choose.

I'm a traditionalist, so I prefer Mozzarella.
