Subject: Recession Food

Face it, we are all on tight budgets and it's going to get even tighter.

So bring out the spam, get dishes that will last for three days, lay it all on the line!

I've been on a tight budget for the last three years, and have never had to resort to eating Spam.

I got 15 oz raviolis for 88c each, and each can is good for a penny off of gas up to 15 gallons.

So, I'm well stocked up on ravioli and gas.

Valentine's Day was the last meal we are eating out for a while. I figure cutting back on fast food, restaurants and beer should save a serious amount of money, not to mention improve our health.

Yes could also call it ham loaf - I love them my husband, not so big on them.  So I freeze them in individual balls and then just cook enough that we will eat for one sitting.

Ground ham, ground beef, and ground pork all mixed together with graham crackers and other stuff.  Then a tomato soup mixture is put over the top (with maybe a pineapple slice).

Yummy!
Great way to use leftover easter ham, or any ham for that matter.  I then use the ham bone for soup.  Again I form them into balls and individually freeze them, so that I can take out as many as I want at a later date, bake them up and I have a meal.

    *  1 1/4 pounds ground smoked ham
    * 1 pound ground pork
    * 1 pound lean ground beef
    * 1 cup milk
    * 2 eggs
    * 1 1/2 cups graham cracker crumbs
    * 1 (10.75 ounce) can tomato soup
    * 1/4 cup cider vinegar
    * 1 cup packed brown sugar
    * 1 teaspoon mustard powder

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  3. In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  4. Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (70 degrees C).

Generic's and Store Brands      - we have a bakery that bakes Generic bran breads - They just had to hire 25 more people, and they are thinking about going to 2 shifts, because demand for generic bread has gone up so dramatically.  At least some American company is succeeding

In the winter, I stretch out food by making tons of soups.  Since I come from a large Mexican family, I'm used to cooking in bulk, so a pot of soup can be stretched through several dinners and lunch for Rice Cube.  However, there is one soup I can't make because the only way I know how to make it is in the biggest pot I have (tamale pot): menudo (NOT the boy band!).  If I made it for just the three of us, we'd be eating it for a week and a half!

So if anyone who lives close to me wants some spicy hot soup filled with cows stomach and pigs feet, let me know. ;D

Lots of different spices, hominy, cow stomach, and pig trotters. :D  It's sort of spicy and is widely known as the hangover cure because we all eat it after a night of hard drinking. ;D

Will using all the "parts" become popular again - liver and onions, tongue, heart, head cheese, pickled pigs feet( 8-P), sweet breads, gizzards,etc.....?????

I remember my mom and my aunt (who both grew up during the depression) making head cheese, I thought something smelled wonderful in the kitchen - when I opened the pot - AAAAAAHHHHHHHHHHHHHHHH (been traumatized for the rest of my life).

ramen noodles!

Ramen noodles was all my daughter would eat when she was very young.  So often that I had to ask her doctor if it was okay to eat so much of it.  Every meal for a while.  He wasn't worried about it.  To this day she still loves them but not nearly as much.  Ramen noodles is one item I always have to have in stock.  An added bonus that they are so cheap.
