TUNA ENCHILADAS 

1 1/3 c. vegetable oil, divided
1-2 cloves garlic, finely minced
1 (28 oz.) can enchilada sauce
1/2 tsp. cumin
2 1/2 tbsp. flour
2 1/2 tsp. cold water
2 tsp. chopped cilantro (optional)
2/3 c. onions, finely chopped
1/2 c. chopped ripe olives
4 c. shredded Cheddar cheese
1 (9 1/4 oz.) can tuna, well drained
1 (12) pkg. fresh corn tortillas

1. Heat 1/3 cup oil in a saucepan and saute garlic lightly. Add enchilada sauce and cumin. Combine flour and water in a small bowl until smooth; add to sauce, stirring constantly. Heat sauce until thickened and smooth. Keep warm.
2. Combine cilantro, onions, olives, 2 cups of cheese and tuna. Blend lightly and set aside.

3. Heat 1 cup oil in skillet over moderate heat. Fry tortillas lightly, one at a time, until soft and flexible but NOT crisp. Dip into sauce to coat each side.

4. Pour 1/3 cup sauce into bottom of 13 x 9 x 2 inch casserole dish or pan. Fill each heated sauced tortilla with 1/2 to 2/3 cup of tuna filling mix. Roll each and place seam side down in single layer in the casserole dish.

5. Sprinkle remaining cheese over enchiladas and cover with 1 1/2 cups of sauce.

6. Cover with a bubble of foil. Bake in a preheated 350 degree oven for 25-30 minutes. When hot and bubbly, serve with remaining sauce. Serves: 6-8.

TUNA TACOS 

1 (6 1/2 oz.) can tuna, drained and flaked
1/4 c. bottled salsa
8 corn taco shells
1 c. chopped tomatoes
1/3 c. chopped green onion
2 c. shredded lettuce
1 c. garbonzo beans

TOPPING INGREDIENTS (optional) :

1/3 c. sliced ripe olives
Salsa
Shredded low fat cheese
Diced avocado
Chopped green chilies

In a medium bowl toss together tuna, onion, salsa until combined. To assemble taco, sprinkle lettuce into each taco shell. Divide tuna mixture among tacos, along with beans, tomatoes, and olives. Garnish as desired with other toppings. Yield: serves 4 - 1 serving = 273 calories.

i made the turkey enchiladas last night. it was an adventure because i was trying to synthesize two recipes at the same time and halve one (make half as much as the recipe called for). i was trying to get rid of a pound and a half of turkey and i made .75 pound worth of missouri burgers and 10 turkey enchiladas with the other .75.

the turkey enchiladas were really good but i added too much of something, i think it was cumin. the only two spices i added were cumin, to the turkey/monterey jack combo, and chili powder, which i added to the sauce. (you want to slather sauce on the inside of the tortillas, i didn't have the ingredients for the recipe so i just chopped up half a tomato, added enough canned tomato soup to give it consistency, and seasoned it with chili powder. in retrospect, i could have safely added some picante or salsa and had enough to do all the enchiladas with a healthy dose of sauce.)

anyway, it was fun but i pretty much didn't leave the kitchen once all last night, until i wearily ate the enchiladas and then passed out from exhaustion.  :D

the missouri burgers aren't done yet. the idea behind them is that you make burger patties and then, before frying them, you season them with a delicious combo of honey mustard and various herbs and spices -- garlic and onion powder, basil, that kind of thing. but the seasonings make the patty so it doesn't hold together well, it's very crumbly. so after i put together the spices with the turkey i baked it real lightly, like 150 degrees or so, for about 5 minutes or so, until it gets a consistency almost like refried beans, very smooth. (i actually did it because one of the ingredients is brown sugar and it went in kinda lumpy so i wanted to melt it.) but i think part of the problem is if you shape the patties while they're raw the components are all separated so it stays discrete even after you cook the patties. with the light baking, the patties should have a soft, integrated consistency but still be cool to the touch. (obviously baking raw meat presents a danger factor so make sure not to do it too long. you're just trying to soften everything up.)

then, here's the coup de grace... you freeze it! overnight! right now i got three missouri turkey patties in the freezer and when i make em (i don't think i'm gonna feel it tonight, could be a new years day thing) i'm gonna slap that frozen patty right on to a hot pan! i think between the pre-baking and flash-frying the frozen patty it'll hold together, but i haven't tested it yet. 8)

yeah, it took five cuz they're sorta good, too. i dunno, i'm confused. i think i might just be burned out on enchiladas.

yeah, cooking's fun, it's been a while since i had my own kitchen so i'm trying to make the most of it.

For the past 11 years, in our household, it has been a tradition to cook a cranberry-apple french toast breakfast for New Year's; it always comes out tasty each time. :)

I would suggest maybe buying a can in the store and heating the contents of it...but maybe that might be considered cheating. :-\\

yeah, with the cheese it's damn heavy, i can only eat a smidge of it at a time. but damn, it's good.

last night, pan-fried chicken in cream of chicken over rice with assorted herbs and spices. no cheese!

I actually make mine on the stove..... and no bread crumbs...

here you go

- add one diced onion to .75 - 1lb ground beef (preferably 94% - 97% lean)
- brown the beef and onions and then drain.
- Make macaroni (IMO the elbow style is better than tiny kraft style)
- add the cheese if you want
- add 2 8 oz cans of tomato paste (not sauce) plus 2 8 oz cans of water
- add beef
- stir all and let simmer on stove
- salt & pepper to taste

enjoy mass quantities.

Tater tot casserole - I like it better with Cream of Chicken - Hamburger, a can(or 2) a vegetables if you like (corn, green beans, carrots,etc..), mix it in with the soup

Cover with Cheese, Put Tator Tots on top - bake 350 degrees for 30-45 minutes - YUMMY

yeah, if you're gonna cook semen in your dish you need to leave out the added table salt. very important.

usually when I make chili all I have to do is open the can, dump the contents in a pot and heat.  ;D

i just invented this recipe and made it. it's okay, next time i'm gonna be bolder with the spices.

Superbowl Bean Dip!

4 slices bacon, crisply cooked
½ can red refried beans (I’d do kidney beans next time)
1 can refried pinto beans
½ jalopeno pepper
2 cups cheese (cheddar, Monterey jack, provolone, swiss)
½ diced onion
½ cup green onion, diced
5 cloves garlic
1 lb ground beef
1 chopped tomato
2 tbs flour
½ stick butter (maybe cut back to ¼ stick)
½ cup milk
½ cup beer
½ ts chive
½ ts salt
1 ts sugar
1 teaspoon cumin
1 tbs taco seasoning
Sprinkle chili powder
¼ ts red pepper
Sprinkle paprika
1 tbs olive oil

Brown ground beef, discard grease. Brown bacon until crisp. Drain on paper towels and cut up into small squares. Peel garlic cloves, crush with side of knife, finely mince. Sautee onions until clear, heat garlic until lightly golden but not brown. Add to beef along with bacon and simmer to keep warm.

Separately, combine milk, beer and butter. Heat until butter is melted. Add flour, stir briskly until smooth. Add cheese, stir until melted. Simmer until ready to add. Heat refried beans, add diced tomato, jalopeno  and green onion. Combine with beer and stir. Add cheese sauce and stir. When consistent, ready to serve.

Today was just plain on plain.  Classic, you know?

My favorite is asiago cheese or onion.  I like some of the sweet ones - blueberry or cinnamon.  Yum.  I also love veggie cream cheese...but not on the sweet bagels.

You know what is surprisingly good though?  Peanut butter on an onion bagel.  I know it sounds totally weird...but the two tastes combine beautifully.  Especially if it's from Einsteins - do you have that there?  They make this honey whipped peanut butter that rocks out on the onion bagel.

peanut butter & onion sounds extremely weird, but I love PB and honey whipped sounds intriguing & if you say it's that good, I'd give it a try.  no Epsteins here, Noah's is the main bagel nosh here.  I like the plain schmear the most, and then onion and chive, they had a sundried tomato & basil which sounded good, but I didn't get it.

It's the 'religious' name for it I believe.  I was brought up to call all festivals by the proper term - e.g. I call it Mothering Sunday, not Mother's Day.

They're not bad, a little bland which is kind of good for Lent.  My parents always felt simple meals during lent were part of the mystic of Lent.  Which is quite a switch from having meat and potatoes the rest of the year.

I decided to try and like fish, so I had Halibut and fries at Arctic Circle on Friday.  It was surprisingly good.  It was also the first time I'd ever had tartar sauce.  I liked it.

The one thing I figured out from last week's get together is that I have to get out more and see what is in my own
backyard. Tomorrow, at The reading Terminal Market, there will be a scrapplefest and I will be there to sample the
wares.

First, what is scrapple?

Scrapple is a hash made of pork scraps and trimmings combined with cornmeal and flour. This hash is formed into loaves,
then sliced, fried and is usually served with breakfast. Scrapple is a staple of Eastern Pennsylvania, New Jersey, Delaware,
Maryland, Washington DC and parts of Virginia. It was introduced by the Pennsylvania Dutch, who were actually German,
around the 17th century and has been a delicacy, to some, ever since.

I like it with eggs, over hard, and put on a long roll with ketchup but I will eat scrapple any way. Tomorrow, I will go to
the scrapplefest and find other ways to eat this magnificent mystery meat.

I don't blame you, scrapple isn't very eye appealing and most people outside the area don't really know what to do with it.
I like slices about 3/8 of an inch thick, flour both sides and fried with a little shortening, vegetable works as well, until there
is a blackened crust on both sides.

Make no bones about it, scrapple isn't for everyone and it's one of those things that you don't want to know what's in it.

In that case, I change my mind. 8-P

I always thought that "snout and ears" referred to the organs, which to me doesn't seem likely for consumption. OTOH, I'd be suprised at what people eat. I once got into a discussion a couple years or so ago with people discussing food/things they don't like to eat, and they mentioned some rather disgusting stuff.

I was in an Italian butcher shop last week and they had pigs feet, pigs ears, and pigs tails, and tripe.  Tripe is still very common.  I remember when I was very young you could get those at just about any butcher.  You don't see much or it anymore.

When I eat desserts, I don't load up on anything too heavy in calories.


Me neither....I try to stick to fruit whenever possible.

Entrée
Caesar Salad (topped with grilled chicken and bacon)

Main course
Two sautéed fillets of sea perch accompanied by a piece of quiche (with aubergines and paprikas, amongst other ingredients), this served with fries and salad.

Dessert
A plate of various desserts (spoonful of vanilla ice cream; one ball of cinnamon flavored ice cream on whipped cream; spoonful of chocolate mousse; one small puff; served with a few slices of melon and pineapple)


I'm not the "three course menu" type of guy, but I must admit this was finger licking good stuff!  :D
