Subject: Cheesy corn bake...

This recipe is credited to Fiorella's Jack Stack Barbecue in Kansas City, MO. Nothing like Kansas City barbecue, and this is a very popular side dish served at the "Stack."

SERVES 10 -12 (change servings and units)

Ingredients

    * 2 tablespoons butter or margarine
    * 4 teaspoons flour
    * 1/8 teaspoon garlic powder
    * 3/4 cup milk
    * 1 1/2 cups sharp American cheese, shredded
    * 1 (3 ounce) package cream cheese, cut up
    * 3 (10 ounce) packages frozen whole kernel corn, thawed
    * 3 ounces diced ham

Directions

1.Melt butter; stir in flour and garlic powder.

2.Add milk; cook & stir over medium heat.

3. Heat until thick and bubbly; stir in cheeses. Cook/stir over low heat until cheeses melt; stir in corn & ham.
   
4. Bake in 2 qt casserole for 45 minutes at 350.








I've been to Fiorella's Jack Stack a couple times, and I hate to hype anything up but that cheesy corn bake was so damned good that I could almost pass on the BBQ (which is some of the best in the city) and instead just order a 5 gallon bucket of this stuff and I'd be happy.

I tried the recipe, and it came out excellent.

Have you ever heard of Cheesey Macaroni Corn Bake, Here in the midwest we have to find as many ways to add more carbs to a carb enriched food :D

OOPs, I am on Prednisone and am not able to sleep.

That would be:
1 can cream corn
1 can whole kernel corn(do not drain)
1 c. uncooked macaroni
8oz (or more if you like) velveeta
1/2 c melted butter

Mix all together, add salt and pepper to taste, and bake 350  for 1/2 hour , stirring once to mix in cheese.

Tonight I am doubling up the recipe and seeing how that works out, because I'm gonna make it for Thanksgiving dinner and the original recipe, to be honest won't be nearly enough, especially considering how good this sh!t is.

It mixed together OK and it all fit in my 3 qt. casserole dish just fine (which was my main concern), and it's in the oven right now.

Will know in about 45 minutes how it comes out.

I gotta call foul on this part of the recipe, thought.

2-3 fresh garlic cloves, crushed with the flat side of a knife or squished through a garlic press.  If the improvement from using real garlic is anything like it is with any mac-and-cheese recipe (and this recipe is mac-and-cheese, with corn used as a more flavorful and nutritious starch product, and cream cheese used instead of powdered syntho-cheddar), you're doing yourself a disservice by using garlic powder.

Seriously, this sounds more awesome every time I read it.  Gonna try my own hand at it (using real garlic, dammit) this week.

Actually yeah, I usually cook with real finely chopped garlic cloves but I thought I'd follow this recipe to the letter. But then again, that's the best part about cooking...tweaking and modifying the recipe until you get it right.

I might just have to try using real garlic next time, thanks for the suggestion.  ;)

Update:

I made it again a couple more times using garlic cloves which I had ran through a garlic press. It seems like 2 cloves is just about right, and it was a definite improvement.
