Subject: Meatloaf

Unlike many people, I cannot stand Meatloaf!
However, my son and hubby love the stuff.
I was given a basic recipe for it and it works out fine...
But I am looking for a recipe that kicks azz and that I might even enjoy.
This is the recipe I use:
2 pounds lean ground beef
2 teaspoons salt
1/4 teaspoon ground black pepper
2 eggs, lightly beaten
1/2 cup soft bread crumbs
1/2 cup milk
1 teaspoon Worcestershire sauce
1/4 cup finely chopped onion
1/4 teaspoon dried leaf thyme, crumbled
1/4 teaspoon dried leaf rosemary, crumbled
Aside from just adding random things, anyone have good meatloaf recipes?
Actually, any of your meatloaf recipes or ideas would be awesome!!!

Try cooking it with garlic and red onions on top, we did that.
Also, you could go the old-fashioned route of cooking it with ketchup. But a trick you can do is to bake it with the ketchup side down. For some reason when you do it that way it absorbs more of the flavor, and it seems to be moister.

I'm with you on that. The only Meatloaf I like is the one who sings "Paradise By the Dashboard Light." :D ;D ;D
Actually, I think what turned me off to meatloaf was my ex-husband. He used to make it all the time and it was just awful.

Hey, I like that Meatloaf too!!! :D
What turns me off is the dry pastiness of it. And I am not a big ketchup fan so covering it in that is just gross! :o

It's funny you mention Meatloaf. Just yesterday, I was scowering the internet looking for a Meatloaf recipie. The one I found was horrible, and the end result made me very ill. When you substitute the bread crumbs for crackers, it doesn't taste all that great :-[

Honestly I'm not much of a meat loaf fan either Tam.
I prefer hamburger steaks. :)
They're awesome, because you can eat the whole thing. ;D

I don't use thyme or rosemary. I use breadcrumbs with italian seasonings -- parsley, oregano, garlic. And I put in some ketchup. You can also top it with stewed tomatoes if you like them. I also like adding diced onions and green peppers into the meatloaf. You can spice it up however you like.

Sounds a bit like my recipe, except for the stewed tomatoes.

I don't tend to measure my ingredients...
Here's what I use to make a meatloaf:
Ground turkey
bread crumbs/pieces of bread
1 or 2 eggs
triscuits/saltines
barbeque sauce
ground cayenne
alittle salt
black pepper
garlic powder

Meatloaf is just awful, I never understood the following. And I don't like the food either. ;) I liked it as a kid, now it kinda grosses me out.

I'm not much of a fan either. I can tolerate it.. but like I said my preference is hamburger steaks. 8)

My mom makes meatloaf with ground pork, ground beef and ground veal. I don't know what spices she uses, but she tops it off with tomatoes, onions and red bell peppers.
